Dates And Tea Bread


Mummy's Tea Bread


"This is my mother's recipe, a bread she always made at Thanksgiving and Christmas to be used for tea sandwiches with a cream cheese filling. But it may also be eaten on its own like a cake. Because it is so delicious yet simple to put together, it makes a great food gift or potluck contribution. Substitute raisins for dates, if you wish."

Ingredients

1 1/2 cups chopped pitted dates 1 1/2 cups white sugar 1 teaspoon salt 2 tablespoons butter 1 1/2 cups boiling water 1 egg, lightly beaten 2 3/4 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon cream of tartar 1 1/2 teaspoons vanilla extract 1 cup chopped walnuts (optional) Add all ingredients to list

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour 9x5 inch loaf pan.
Place the dates, sugar, salt, and butter into a bowl, and pour in the boiling water. Stir together and set aside to cool. Once cool, mix in the egg.
Stir the flour, baking soda, and cream of tartar together in a bowl. Pour the raisin mixture over the flour mixture, and stir together until thoroughly combined. Mix in the vanilla extract and, if desired, walnuts. Pour batter into prepared loaf pan.

Bake in preheated oven until knife inserted in center comes out clean, about 1 hour 15 minutes. Cool in pan 10 minutes before turning out onto a rack to cool completely. Wrap in aluminum foil and store in the refrigerator.

"An easy and quick date nut loaf served with a warm brown sugar sauce."

Ingredients

1 cup dates, pitted and chopped 1 cup water 1/2 cup butter 1 cup white sugar 1 teaspoon baking soda 1 1/2 cups all-purpose flour 1 egg, beaten 1 teaspoon vanilla extract 1 cup chopped walnuts 1/4 cup butter 1/3 cup heavy cream 1/2 cup brown sugar

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan. In a saucepan over medium heat, bring dates and water to a boil. Stir in 1/2 cup butter and 1 cup sugar until melted. Remove from heat and stir in baking soda. Let cool for 10 minutes.
Place date mixture into a large bowl. Blend in flour, eggs and vanilla. Stir in chopped walnuts. Pour batter into prepared pan.

Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Serve slices with Warm Sauce.

To make Warm Sauce: In a saucepan over medium heat, combine 1/4 cup butter with cream and brown sugar. Heat, stirring constantly, until mixture boils and sugar is dissolved.

 1 cup butter, softened 1 1/3 cups white sugar 3 eggs 3 cups sifted all-purpose flour 1 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/4 teaspoon ground cloves 2 teaspoons water 1 1/2 cups chopped pitted dates 1 cup chopped pecans

Directions

In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition. Combine the flour, baking soda, cinnamon and cloves; gradually stir into the creamed mixture. Combine the water and dates; stir into the dough along with the chopped pecans. Cover and chill for 1 hour.
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Drop by rounded spoonfuls onto the prepared cookie sheet.

Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

2 1/2 cups all-purpose flour 1 teaspoon baking soda 1 cup butter 1/2 cup packed brown sugar 2 teaspoons vanilla extract 1 cup white sugar 2 eggs 1 cup dates, pitted and chopped 1 cup sugar frosted corn flake cereal Add all ingredients to list

Directions

Preheat oven to 350 degrees F (175 degrees C).
Combine flour and baking soda in a small mixing bowl.
Cream butter, brown sugar, vanilla and white sugar together. Beat in eggs. Mix well. Slowly blend in the flour mixture. Fold in the dates. Drop dough by teaspoonful into crushed corn flake cereal until coated.

Bake on ungreased cookie sheets for 10 to 15 minutes

Bacon Wrapped Dates Stuffed with Blue Cheese

"Dates are stuffed with blue cheese, wrapped in bacon and baked until crisp. These are delicious and very easy to make for a party. You can serve them at room temperature, so it is okay to make a few hours in advance!

Ingredients

1 pound sliced bacon, cut in half 1 pound pitted dates
4 ounces blue cheese
Add all ingredients to list

Directions

Preheat the oven to 375 degrees F (190 degrees C).
Slice dates in half, and open them up. Pinch off pieces of blue cheese, and place them into the center of the dates. Close the halves of the dates, and wrap a half-slice of bacon around the outside. Secure each one with a toothpick. Arrange in a baking dish or on a baking sheet with sides to catch any grease.

Bake for 30 to 40 minutes in the preheated oven, or until the bacon is crisp. Turn dates over after the first 20 minutes for even cooking.

Moist Date Nut Bread

"A moist not too sweet version of a figgy pudding but made with dates and minus the spices. You could try covering with buttered foil and steaming it for a even moister version. This can also be baked in a (28 ounce) can."

Preheat the oven to 350 degrees F (175 degrees F). Grease and flour a 9x5 inch loaf pan.
In a medium bowl, combine the dates and butter. Pour boiling water over them, and let stand until cool.
When the dates have cooled, stir the mixture to break up any clumps. Mix in the brown sugar and egg until well blended. Combine the flour, baking soda, baking powder, and salt; stir into the date mixture until just blended. Stir in walnuts. Pour into the prepared pan.

Bake for 50 minutes in the preheated oven, or until a wooden pick inserted into the center comes out clean.

Ingredients

1 cup chopped pitted dates 1 teaspoon baking soda 1 cup strong brewed coffee 2 tablespoons butter, softened 1 cup white sugar 1 egg 1 teaspoon vanilla extract 1 1/2 cups all-purpose flour 1 teaspoon salt 1 cup chopped pecans Add all ingredients to list

Directions

Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x4 inch loaf pan, and line the bottom of the pan with parchment paper.
Place the dates in a small bowl, and sprinkle the baking soda over. Heat coffee to boiling, and pour over the dates and soda. Set aside.
In a medium bowl, mix together the butter, sugar and egg until well blended. Stir in vanilla. Blend in the flour and salt, then fold in the pecans and date mixture. Transfer the batter to the prepared loaf pan.

Bake for 1 hour in the preheated oven, or until the top of the loaf springs back when lightly touched. Let stand for 5 minutes before removing from pan. Peel off paper, and allow to cool on a wire rack.

Ingredients

1 1/2 cups dates, pitted and chopped 2 1/4 cups boiling water 3 teaspoons baking soda 1 cup chopped walnuts 2 cups white sugar 3 tablespoons margarine 2 eggs, beaten 1 teaspoon salt 4 1/2 cups all-purpose flour 1 teaspoon vanilla extract Add all ingredients to list

Directions

Combine baking soda with the boiling water. Soak the dates in the water and baking soda solution for 30 minutes.
Cream sugar and butter together. Add eggs, vanilla, dates, nuts, flour, and salt.

Divide batter equally between two 9 x 5 (or 8 1/2 x 4 1/2) inch greased loaf pans. Bake 1 hour at 300 degrees F (150 degrees C) (or until loaf tests done). Can be frozen when cool.
